VEG FRIED RICE




INGREDIENTS:

  • Basmati Rice - 1 azhaku ( 1 cup)
  • Onion - 1/2 
  • Green Chilli - 2
  • Ginger - 1 small bit
  • Garlic - 2
  • Carrot - thin sliced 1 hand full
  • Beans - thin sliced 1 hand full
  • cabbage - thing sliced 1 hand full
  • Spring Onions - 2 strands
  • Cinnamon stick - 1
  • Ghee
PREPARATION:



STEP 1: 

  • Soak Basmati rice in water for 30 minutes.
  • Take pressure cooker add 1 spoon oil, 1 spoon ghee and cinnamon stick
  • Put the rice in cooker and let it get pressure cooked for 2 full whistles. Switch off
  • Take a bigger plate and brush it with ghee. Put the cooked rice and spread it out in the plate. Doing this rice remains non sticky
STEP 2:
  • Grind Ginger garlic and green chilli into fine paste and keep it ready
  • Heat oil in pan
  • Add onions, chopped spring onions ( not the green leaf springs only the shallots from spring onions), ginger garlic chilli paste and toss them well.
  • Add carrots and beans first and toss it for 5 mins.
  • Add cabbage and 1.5 spoon of salt. (1 spoon of salt is for 1 cup basmati rice. Half spoon is for the veggies).Add little water so that the veggies get cooked well.
  • Close pan with lid and leave it for 5 mins in medium flame.
  • Only spice here is green chillies. If you prefer black pepper then sprinkle 1 teaspoon at this time.
  • Open the lid and switch off once water is drained. 
  • Now add the cooked rice and toss it gently so that the veggies mix well with the rice all around.
  • Add finely chopped green leaf springs of the spring onions as topping.

Restaurant Style Fried rice is ready to get served
