Shahi Broccoli




INGREDIENTS (For 6 adults)

  • BROCCOLI - 2
  • Onion - 6
  • Green chilli - 5
  • Cardamom - 4
  • Jeera - 1 and 3/4 spoon
  • Cinnamon stick - 2 inch
  • Black pepper - 1 tea spoon
  • Cloves - 8
  • Bay leaf 
  • Star Anise - 1
  • Cashew Nuts - 20
  • Ginger garlic paste - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 2 tablespoon
  • Curd - 2 cup
  • Rice flour -1 teaspoon


PREPARATION:

STEP 1 : 
  • Cut Broccoli into small florets. Avoid the light green florets. Use the dark ones.
  • Boil them in Hot water for 5 mins similar to cauliflower
  • Switch off stove and strain the water and keep it aside
STEP 2:
  • Heat oil in pan , add cinnamon stick, cloves, star anise, jeera 3/4 spoon , cardamom and black pepper.
  • Add fine cut onion and green chilli.Toss it well. Add salt required for onions to get cooked faster.
  • Once onions are cooked, add coriander powder ,turmeric and required salt.
  • Toss them well and add the cashew nuts. Once tossed well switch off stove and allow it to cool down.
  • Grind it to smooth paste 
STEP 3:
  • Heat oil in pan again. Add 1 spoon jeera & bayleaf 
  • Add the grinded paste and 1 tumbler of water in medium flame of heat.
  • Add 1 teaspoon sugar and mix it well so sugar gets dissolved. 
  • Add the strained Broccoli to the gravy now and mix gently so that broccoli doesn't get smashed.
  • Beat the curd well and add to the gravy
  • Mix 1 teaspoon rice flour in little water so that it gets dissolved fully and add it to the gravy to gain some thickness.

Shahi Broccoli is ready to be served.
